The Best Vegan Gravy EVER – Recipe

Are you looking for the most amazing gravy recipe ever? Well, look no further! You have stumbled upon it! 🙂

My family begs me to make this awesome gravy once a week in the cooler months. Of course, I make it because it’s super simple and tastes absolutely divine..

Shiitake Gravy Recipe:

Ingredients:

  • Âœ onion, minced
  • 10 shiitake mushrooms, sliced
  • 3 cloves garlic, minced + 1 tsp dried garlic powder
  • 1 tsp dried onion powder
  • 2 cups veggie broth
  • 1 tsp capers
  • Âœ tsp thyme
  • ÂŒ tsp rubbed sage
  • 2 tbsp. nutritional yeast
  • 1 tbsp. tamari  (or soy sauce)
  • 2 tbsp. arrowroot
  • ÂŒ plain almond milk
  • Himalayan pink salt + black pepper to taste

Directions:

  1. Sauté onion until light brown (about 10 minutes) Add mushrooms + 1 tbsp. water, cook for another 3 minutes.
  2. Add garlic, and cook, stirring for 1 more minute.Add the veggie broth, herbs, nutritional yeast, + tamari in a bowl – whisk in the almond milk + arrowroot powder until smooth.
  3. Add veggie broth mix to onion & mushrooms and stir well.
  4. Simmer, stirring occasionally, for 15 minutes
  5. Season one last time with salt + pepper to taste – and ENJOY! ❀

I’m often asked what I use lavender essential oil for. I have bottles of it all over the house. 😉

Lavender is divine. Such a calming and beautiful aroma.  Aside from that though, there are many uses/benefits of lavender.

– About Lavender –

Lavender is an oil that has been used for millennia and noted for its cleaning and healthful properties.  Through modern scientific testing its time proven properties have been confirmed.  It is one of the most popular of the essential oils. There are multiple types of Lavender (from different plants) so it is important to have lavandula angustifolia. The preferred Lavender is steam distilled from the flowering tops of plants with some of the finest quality from Europe. DƍTerra Lavender is steam distilled from the flowering tops of plants from France (fine high altitude) and Bulgaria (super high altitude).  These are joined together in equal ratios.

Here’s a great list of the many uses for lavender!

Body and Mind

  1. Target Acne, at the Source: Bacteria thrive in sebaceous glands that over produce sebum
that waxy stuff that can be associated with acne. Lavender helps balance sebum and control break outs.
  2. Minor Burns, Major Relief: When you’ve slightly overdone it in the sun, a little lavender oil is helpful in preventing peeling skin. It aids in your skin’s healing without scarring as well!
  3. First-Aid Relief: Lavender has disinfecting properties. It’s great for the skin, and wonderful for relief from cuts and scrapes, especially if the cut or scrape is located wherever it’s difficult to keep covered. Basic First-Aid kits are often geared toward minor skin irritation, scrapes, rashes, and so forth.  Lavender is great for all those, not to mention its calming properties!
  4. Diffuse and Apply Topically For Beauty Sleep: Ahh, I LOVE to diffuse lavender essential oil. (As well as Serenity blend, which contains Lavender!). This puts my kiddos & I to sleep so fast. 🙂 Just a couple of drops applied to the soles of the feet and/or pillows helps to calm and sooth them so they actually want to go to bed, and 10 minutes of diffusing and they are in dream land.
  5. Alleviate Feelings of Earaches:  Slightly warm lavender, mix with olive oil and gently massage around the ears (not in the ears) and near glands in the throat.
  6. A Hood of Wonder: Next time you have a cold or the flu, remember the lavender steam hood. Add 4-6 drops to a bowl of hot water. Place a towel over your head, and inhale the vapor slowly and deeply.
  7. Horrific Heels & Foot Fatigue: If you’ve been wearing sandals all summer, and your heels need some help, 8 drops of lavender in a hot foot bath is the answer. Your porous feet will thank you.
  8.  Dry Climate relief: If you suffer from dry, itchy skin, or even eczema and don’t want to mess around with chemical smelling lotions, or steroid creams, add lavender to fractionated coconut oil and comfort will be yours!
  9. Lavender Oatmeal Face: Fill a baby food jar with oatmeal, and add 5-8 drops of lavender oil.  When it’s time to wash your face, add water and it becomes an excellent natural scrub! A little goes a long way.

  11. A Woodworker’s Friend:  Do you work with wood or handle wood? Rather than dig a hole in your finger trying to catch that splinter, add a few drops of lavender, let the splinter swell and slip out.
  12. Allergies, Sinuses & Congestion :  Lavender can calm down unruly sinus issues, defiant allergies and other respiratory issues. Just apply on the back of your neck, and chest.
  13. Rub a Dub Dub: Rather than using regular soap and warm water at baby’s bath time, add about seven drops of lavender oil to the warm water.  Your tot’s skin will be pampered and smell great!
  14. Soak Away Stress: Your muscles are tight. Anxiety and deadlines are eating at you. Your heart is racing. Where’s the pressure release valve?  Right here, with lavender. Add to a warm bath, soak it in, soothe.

Home Use

  1. Take the Bite Out of It: Insects, are not too fond of the smell of lavender. In fact, they hate it. If you forget to go the prevention route, lavender soothes bites, itching and inflammation.
  2. Therapeutic Dish or Laundry Soap: If your liquid soap smells a bit flat, especially if you’re using an all-natural blend, you can add lavender for additional aromatherapy benefits and antibacterial properties. It transforms your cleaning experience!
  3. Lavender candles: Ahhh the long lost art of candle making. If you’ve ever made candles you know how fun it can be. When you add lavender, the smell that is released is intensely therapeutic!
  4. Skip the Aerosol Chemical Sprays: Next time you are deodorizing the bathroom, think of lavender and water in a spray bottle. Lavender’s antibacterial, antibiotic, antiviral, antiseptic properties can only help.
  5. Lovable Linens: What does your linen closet smell like? Probably cotton. Maybe old cotton. Energize your linens with lovely smelling lavender.  It leaves no oil marks and leaves things invigoratingly fresh.
  6. Wood Floors, Like New: A tired wood floor is, well 
 tired. Commercial floor polishes often contain harsh chemicals. Woods love oil.  Just add lavender to your cleaning system and your floor can look like new!
  7. Help That Trusty Ball Cap: A well-worn, much loved ball cap can look great, but smell like a wild animal. Add 4-5 drops of lavender to make it bearable. It will be your favorite hat if you have a headache too!
  8. Homemade Room Freshener: Put baking soda and a 5-6 drops of lavender oil in a small Mason jar. Punch holes in the lid. Place in smelly areas (near garbage can, dirty clothes), shake jar often. Smile.
  9. Pet Smells No More: Add a skiff or two of your baking soda and lavender mixture to carpets and vacuum up!  If you have pets, (especially the un potty trained variety), fight back with lavender!

Cooking

  1. Bake Like the Best: Lavender is a nice addition to lavender blueberry banana bread, lemon lavender cookies, lavender sugar cookies, lavender muffins, lavender cakes, lavender frosting. You could gift a ball jar of lavender infused goodies!
  2. Soften Citrus Flavors: Use in delicate lemon sauces or in powerful orange marmalades, citrus salads, real lemonade and more!
  3. Amazing Marinades and BBQ: Baste on the grill with maple syrup or a garlic and rosemary blend, spread over roasted vegetables, marinade tofu or fruit pieces in maple & lavender, yum!
  4. Tea: Are you a tea enthusiast? Have you hadlavender in your tea yet? You m u s t try!

It’s me! 🙂

This was my table at a wellness fair at a local wellness center, All Natural Training and Wellness in Salisbury, Mass.

I had so much fun promoting my holistic health coaching and pure essential oils!

So, what exactly does a holistic health coach do? Well…

Coaching involves a conversation where one person listens and then advises another person on any subject matter. Over time this term has been used for coaches in education, athletics and music.

As a holistic health coach, I encourage individuals to explore their inner strength and wisdom, improving their confidence and making changes and improvements from within.

 The health coaching model is embedded in the fields of psychology, social work, nursing, eastern philosophy, holistic health and wellness management.

A wellness vision is a creative statement by the client that reveals his/her highest potential and can include nutritional, physical, emotional, social, spiritual and financial realms of their life. A new life vision empowers one to see new possibilities along with a specific and clear direction, which can be manifested through inner creativity, wisdom and power. It allows one to activate their imagination and then think, feel, speak and ultimately see the manifestation of their unified highest potential. A wellness vision is a tool a health coach uses to help the client move to new levels of wellbeing by connecting the client to their own truth and wisdom that is held within.

  The manifestation of a wellness vision is done through the process of goal setting. Goal setting is a collaborative behavior change technique used between the coach and the client. During the motivational interviewing process, after strengths, values and desires are determined and the client’s vision is set in place, specific goals are set so the client is able to move in the direction of his/her newly formed desires.

In other words, we help transform your dreams into reality!

I can help you work through your frustrations and uncertainty. Through the good days, and the not so good days.

Purely Essential: Top 7 Uses For Essential Oil of Peppermint

The first time I ever tried pure essential oils was when I received a free sample from a friend who is a Wellness Advocate with doTERRA International. I remember my 2 year old had the hiccups. Not just gentle hiccups, but those violent almost painful hiccups. I remembered reading that peppermint oil could cure the hiccups in seconds and of course, I thought back to all those “cures” from when I was a kid myself trying to get rid of pesky hiccups. I figured, “what do we have to lose?”

2 drops of peppermint oil on the back of his neck and 1 second later, the hiccups were gone, vanished!

I couldn’t believe that my mom didn’t know this. I couldn’t believe the whole world didn’t know this!

Then I got a headache. I happened to be talking with my Wellness Advocate friend, and she said “3 drops of peppermint oil on the back of your neck!” 🙂 I thought, “waahht?”

3 drops of peppermint oil on the back of my neck, and 10 minutes later, my headache was completely gone! How much would you pay for something that you do not have to ingest, and it takes away headaches (and hiccups!) in minutes? Oh, and it’s completely natural, not poisonous to your liver. Contains no pesticides, synthetic chemicals or additives. 100% pure essential plant oil.

So obviously those are my personal top #1 & 2, Here’s 3-7….

3.) Sore Muscles: Because peppermint oil has analgesic, anti-inflammatory and anti-spasmodic properties, it not only can relieve pain and inflammation but can also calm the spasms that cause muscle cramps.

  • Dilute with fractionated coconut oil and rub entire area which is sore.

4.) Stress Relief: Like many other essential oils, peppermint is able to provide relief from stress, depression, anxiety, and mental exhaustion due to its refreshing nature.

  • For stress relief, combine peppermint & lavender essential oils to help relieve tension while absorbed through your body’s largest organ: your skin.
  • Aromatherapy is amazingly effect as well. If you are new to diffusing or have yet to try, I highly recommend it! You can find diffusers for as little as $15.00.

5.) Energy/Alertness: Peppermint oil powerfully affects and improves mental clarity and raises energy levels. If you’re trying to cut back on caffeine, this may be a blessing to your mid-afternoon lull.

  • Rub a drop of oil under the nose to help improve concentration and alertness.
  • Diffuse Peppermint oil in the room to improve concentration and accuracy.
  • Apply to the back of the neck and shoulders repeatedly to keep energy levels up during the day.
  • Inhale before and during a workout to help boost your mood and reduce fatigue.

6.) Colds/Congestion: Menthol provides effective relief from many respiratory problems including nasal congestion, sinusitis, asthma, bronchitis and the common cough & cold. It is often an ingredient in natural chest rubs to help with congestion.

  • Massage 2-3 drops (along with a carrier oil) onto chest or drop into a humidifier to help clear sinus and lung congestion.
  • If you’re head is feeling stuffed or you can’t stop coughing, try a peppermint essential oil steam. Pour boiling water into a metal or glass bowl, and add a few drops of essential oil (On Guard blend, eucalyptus and rosemary are good combinations with peppermint). Drape a towel over your head and position your face 10-12 inches above the bowl and breathe in the steam.

7.) Indigestion: One of the oldest and most highly regarded herbs for soothing digestion is peppermint. Peppermint oil is very helpful in digestion asithas a carminative property of expelling gas (from the stomach or intestines so as to relieve flatulence or abdominal pain or distension).

  • Massage several drops on your abdomen, place a drop on wrists, or inhale to soothe motion sickness or general nausea.
  • Drinking mint tea has long been the antidote to an upset stomach.
  • Inhaling peppermint oil is also said to help curb the appetite by triggering a sense of fullness.

Those are my top 7 uses for peppermint essential oil. 🙂 There are many, many more. I encourage you to do some research on these amazing essentials.

 Tomorrow is Day 1!

Day one of my Summerlicious Glow Cleanse, that is!

I wish I had been able to get on here and share this with you all. I started planning for it months ago. It’s a TON of work to put together a cleanse! Then, to test out the cleanse, on myself and on my clients (over and over too!). If you’re thinking,”How hard could it be?” Please, by all means, try and put one together. 😀

I am finally so very pleased with each and every recipe included in this cleanse. The only thing that still needs work is the actual design of the content.

 I’ve gone back & forth from simple text to full out “pretty” versions haha.. The simple text seems much easier to follow. We’ll see where we end up with the design, but for now I am pleased to share it with some of my fellow classmates, clients, friends, and family.

This is not a juice-only cleanse, this cleanse includes fresh juices, succulent smoothies, delicious salads and savory meals after day 5. Originally I designed this cleanse to be 5 days, but have added an additional 5 days to re-introduce super simple cooked meals and simple tasty snacks that will keep your blood sugar balanced and your mind happy. 🙂

I’ve also included yoga & workout suggestions that will work well with the nourishment you’re providing for your bod pod.

I’ve created a private FB group for support and inspiration, where I will be posting daily. I will share some of my recipes here in the days ahead.

I am so ready to clean out my temple from all the (not-so-good) goodies we’ve indulged in since the winter. We just kept going, and going…

The Dirty Dozen & Clean Fifteen – Shoppers’ Guide to Pesticides

Have you been trying to incorporate more organic nutritionally dense produce into your life? Are you feeling like you’re spending too much money on organic? Wondering if it’s worth it?

Two-thirds of washed produce samples in recent government tests had pesticide residues. Did you know A single grape sample contained 15 pesticides. Single samples of celery, cherry tomatoes, imported snap peas and strawberries showed 13 different pesticides a piece.
 Or how about the fact that a conventional head of lettuce contains 68 different pesticide residues?! 68!!

The USDA’s most recent pesticide monitoring data included hundreds of samples of packaged baby food. Which was found to contain acetamiprid, a neonicotinoid pesticide, as well as carbendiazim, a fungicide.

The USDA found 6 different pesticides in apple juice, including DPA, which was banned in Europe in 2012.

I encourage you to do further research on the toxicity and dangers of pesticides and fungicides used by big agra today.

So are ALL conventional fruits and vegetables dirty? … Not quite.

EWG’s Clean Fifteenℱ for 2014 – the produce least likely to hold pesticide residues – are avocados, sweet corn, pineapples, cabbage, frozen sweet peas, onions, asparagus, mangoes, papayas, kiwis, eggplant, grapefruit, cantaloupe, cauliflower and sweet potatoes. Relatively few pesticides were detected on these foods, and tests found low total concentrations of pesticides.

Notable findings:

  • Avocados were the cleanest: only 1 percent of avocado samples showed any detectable pesticides.
  • Some 89 percent of pineapples, 82 percent of kiwi, 80 percent of papayas, 88 percent of mango and 61 percent of cantaloupe had no residues.
  • No single fruit sample from the Clean Fifteenℱ tested positive for more than 4 types of pesticides.
  • Detecting multiple pesticide residues is extremely rare on Clean Fifteenℱ vegetables. Only 5.5 percent of Clean Fifteen samples had two or more pesticides.

Print this awesome guide out and stick it right on your fridge! Keep yourself up to date as the levels change each year.

It is good to know that you can save some money by buying conventional on some important staples that could have 0 pesticide residue.

Although,  wouldn’t recommend buying conventional sweet corn because it is almost certainly genetically modified. That’s another crazy way they are messing with our food supply. I’ll go more into that in a future post.

I hope you are able to use this tool in your daily life. It has definitely saved me some money since I started to use it. I used to let it slide when buying strawberries, bell peppers, and cucumbers because they are so unbelievable expensive for organic. I also used to avoid every item on the clean fifteen list unless it was organic. Ironic, huh! Knowledge is power.

Vote with your dollars. When you can, buy organic. If you can’t AVOID the dirty dozen.

   Kombucha is a delicious health elixir that has been around for over 2,000 years.  It is made from sweetened tea that has been fermented by a scoby (aka “mother” because of its ability to reproduce multiple scobies, or mushroom)

My experience with Kombucha Tea:

I had my first ever kombucha when I was in my second trimester with Kayden. I decided to try it because I was looking for vegan sources of probiotics and Kombucha is an excellent source of RAW LIVE probiotics!

With my first sip I fell in love. I hadn’t drunk soda in about 6 years so it felt like I was sipping on a strawberry soda!

What’s bubbly, delicious, & good for your gut?

Do you LOVE Kombucha like I do?? Kombucha has got to be my favorite thing to drink. I gave up soda over 6 years ago so the first time I tried Kombucha was the first time I had anything bubbly to drink since then! The very first time I tried Kombucha it was because of a lovely lady named Dashama. I highly recommend checking her out! She’s amazing, she has some great videos on Youtube like this one. Anyway, my favorite is GT’s Strawberry Serenity. You know what, though? I am a stay at home mom of 2 and I can’t afford $3.69 – $4.69/ bottle! So I did a little research. First I found out that there are countless sources for buying your own scoby (mushroom that ferments the tea by eating up the sugar). Then I found out that you could just take a bottle of raw kombucha, leave it on the counter for a week (I suggest pouring it into a container with a larger mouth so you can get the scoby out!) And Voila! You now have your very own scoby! Yayy!

You will need: Scoby

Tea (I like to use Green Tea)

Any type of sugar (I use organic sucanat and I will try honey soon!)

& Container to put it in!

First thing’s first


Boilwater

Boil your water!

Boiltea

Steep tea for 3-5 minutes. Add 1 cup of organic sugar to the tea.

Bkombucha

Once cooled, add tea to Ball jars. (Or any container you have on hand) and add scoby.

Now find a room temp, dark place to allow your scoby to ferment your green tea. (I put mine on a shelf in my closet) It will take between 4-9 days depending on your scoby.

After that, I gently stir the mixture, put a lid on it and keep it in the fridge for about another week. The added sugar from the strawberries will kickstart to scoby’s fermentation and it will get super bubbly. So be careful, sip slowly, and do not shake it! : )

The Very Best Vegan Recipe Ever

Now, onto The Very Best Vegan Recipe Ever! This recipe is adapted from it’s original that I found Here. I have cooked this beautiful meal about a hundred times now. This is my go-to vegan meal to take to family gatherings/holidays where non-vegans attend. I have received only highly positive feedback from every single vegan/vegetarian/and omnivore that has tried this meal. I am so happy to share my version of this dish because over the years of making it, we’ve really created a master piece! Did I mention that this recipe is also super good for your body? 😉  Please cook this and let me know how you LOVE it!

You will need:

For Tofu:

1 block of tofu of your choice, or Beyond Meat (my fav)

1tbsp pure maple syrup

2tsp organic tamari

dash black pepper

Instructions:

If using tofu, make sure to press as much moisture out of the tofu as possible. 🙂

Then sauté on med high-high for 2 minutes on each side. Allow a good sizzle. Then add tamari, maple, and pepper.

For Pineapple Quinoa:

1 pineapple, sliced small (I like to squish mine to get a lot of the juices flowing)

1.5cup dry quinoa (which will make about 4 cups cooked)

1 sm onion, chopped

2 tsp garlic, minced

1/2 red bell pepper, chopped

1/2 cup shiitake mushrooms, chopped

2 carrots, shredded

1 cup kale, chopped

1/4 cup nutritional yeast

1/4 cup + a splash for sauté maple syrup

1/4 cup tamari

1/4 cup coconut oil

Himalayan pink salt

Instructions:

Bring 1cup of water + 1cup vegetable stock to a boil. Rinse your quinoa thoroughly to remove bitter saponin. Add quinoa to boiling water/broth, reduce heat to low, cover and simmer for 12 – 15 minutes.

While quinoa cooks sauté onions, peppers, and mushrooms Until tender, 6-10 minutes.

In another frying pan, sautĂ© the pineapple in the coconut oil until it’s warm all the way through. Then add the maple syrup, tamari, garlic and nutritional yeast to the pineapple.

When quinoa is done cooking add the kale to the quinoa and allow to wilt from the heat of the quinoa with the lid on for about 5 minutes. Now add the sautéed veggies & shredded carrots to the quinoa.

Serve topped with a generous amount of the pineapple maple sauce – And enjoy! Is this not the best ? 🙂
